Hearty and filling, this high-fiber soup is a winter favorite. Using pre-chopped vegetables cuts down prep time.

Ingredients

  • 4 cups Chicken broth
  • 1 cup Brown lentils
  • 1, 10 oz bag Frozen seasoning vegetables (onion, celery, and green pepper)
  • 1/2 cup Carrots, medium dice
  • 1 cup Ham, medium dice
  • 1⁄4 teaspoon Salt
  • 1⁄4 teaspoon Pepper

Directions

  • In a large sauce pan or small stock pot, bring chicken broth to a boil.
  • Add carrots and vegetables. Return to a boil.
  • Add lentils, salt, and pepper.
  • Cook until lentils are tender, about 30 minutes.

Toaster Oven Taquitos

Baked Apples with Cinnamon Crisp

Ingredients

Apples
  • 2 medium Apples
  • 1 Tablespoon Brown sugar
  • 1/4 teaspoon cinnamon
Cinnamon Crisp
  • 1 soft taco-sized Flour tortilla
  • 1 teaspoon butter
  • 1/2 to 1 teaspoon Granulated sugar
  • Cinnamon, to sprinkle

Direction

  1. Peel and slice apples.
  2. Add brown sugar and cinnamon. Mix to combine.
  3. Microwave 1 1/2 to 2 minutes, stirring every 30 seconds.
  4. Meanwhile, spread butter on tortilla then sprinkle with cinnamon and sugar
  5. Cook in toaster oven or air fryer 2-3 minutes or until browned and crispy.
